Gravy from the roasting pan, not a packet. Some places do stuffing. Some do cauliflower cheese. The meat is the centre — local butcher, proper joint, cooked slow.

Dunmore East on a Sunday
Dunmore East is a working fishing village at the mouth of Waterford Harbour. Population about 1,500. Thatched cottages painted cream and pink and blue. The harbour has a lifeboat station, a stone pier, a fleet of day-boats. The village is 12 kilometres south-east of Waterford City on the R684.
Sunday morning is the Doneraile cliff walk — 5 kilometres, starts at the top of the village, follows the cliffs east to the lighthouse, back along the beach road. You see the Celtic Sea, the Copper Coast, Hook Head lighthouse across the harbour. Seals on the rocks. Kittiwakes nesting in summer. The walk takes 90 minutes at a steady pace. Counsellor's Strand is the beach below the village — sand and rock pools, safe for swimming in calm weather. Sunday afternoon some people sail. Some people fish off the pier. Most people end up in the pub for the roast and the match on the big screen.
Booking Your Sunday Roast
